I love Salads and when the tasks are distributed with friends during barbecue evenings, I am responsible for the salads every time. In addition to Italian pasta salad (my absolute salad favorites) and classic potato salad I love to experiment and try out new salad creations. Recently, while experimenting, this spicy Mexican Salad has arisen, which is so delicious that I do not want to deprive you of the simple recipe.
Mexican salad with minced meat
The mince salad with colorful vegetables, light yoghurt dressing and spicy salsa is a bit lower in calories than its big brother the nacho salad. With crispy lettuce, tomatoes, peppers, corn and kidney beans, the party salad tastes summery light and gets through the salsa minced meat a wonderfully piquant note. Perfect for barbecues, garden parties or light dinners.
By the way, the Mexican salad tastes best when served lukewarm immediately after preparation.

Step by Step to the Mexican Low Carb Salad
First, the salad is washed. Tomatoes and avocado are diced and the peppers cut into strips. Put the salad, tomatoes, avocado, corn and kidney beans in a bowl.
Now you have to fry the minced meat with the onions.Cut the tomatoes and avocado into small cubes, cut the peppers into strips. Put the salad and tomato and avocado cubes in a salad bowl with the corn and kidney beans.
