For my quick spring salad you only need a few ingredients and just ten minutes time ! The low carb salad with chickpeas, avocado, onions, cucumber and tomato tastes so deliciously fresh that I could really eat it all the time. For the salad dressing I used olive oil, lime juice, coriander and cumin. A fantastic combination. Slightly oriental, totally refreshing and really tasty with the crisp chickpeas.

You can prepare the salad very well the night before and take it to the office. So you can quickly have a delicious, healthy meal for your lunch break.

  • 1 Avocado
  • 1 small Cucumber
  • 2 Tomatoes
  • 1 small onion
  • 200 g chickpeas glass
Dressing Ingredients:
  • 2 EL Olive oil
  • 1/2 lime
  • 1 EL chopped coriander
  • Cumin
  • Paprika
  • salt
  • pepper
Instructions
  1. Remove the avocado flesh from its shell and dice it to a small size. Peel the cucumber. Cut the cucumber and tomatoes into small cubes. Chop the onion. Rinse chickpeas under running water.
