The other day I invited a vegetarian dinner for a friend and I have to tell you about the delicious main course. After the starter, a mixed salad of cress and sunflower seeds, there was zucchini cannelloni stuffed with ricotta and spinach. You do not believe how tasty the little rolls were! Low Carb Zucchini Cannelloni

Zucchini is one of my absolute vegetable favorites. I love zucchini noodles, zucchini lasagna and now also the wonderful zucchini cannelloni! The small vegetable rolls with ricotta and spinach are stuffed and baked in a spicy tomato sauce. I could have spooned the ricotta and spinach stuffing. So wonderfully creamy and good!

For the recipe, the zucchini are first cut into thin slices and fried. But you can also do without searing if you have little time. Then the whole thing is just a bit more watery. Then the zucchini slices are spread with a ricotta cream and rolled up. They are then baked in the oven with some tomato sauce. Heavenly tasty!

Vegetarian Low Carb Recipe

Non-carbohydrate Pasta Feeling - The delicious cannelloni are a great pasta substitute and perfect for the low carb diet. I like to give up on carbohydrates especially in the evening, because I simply sleep better if I eat something light at a late hour.Defrost the spinach.

  • The zucchini have long since arrived cut thin slices. Peel and dice the onion and garlic.

  • Olive oil Heat in a pan and fry the zucchini strips on both sides for 2 minutes. Then remove.

  • Put onions and garlic in the pan give and sauté briefly. Add chopped tomatoes, basil, oregano, salt and pepper and simmer for 5 minutes. Put the sauce in a casserole dish.
