Fruity low carb egg salad

A readers had recently asked me if I know a fast and child-friendly recipe with eggs. In addition to my yummy sweet potato frittata, I immediately remembered this fruity egg salad . The recipe is made fast, low carb, weight watchers AND your kids will love it. Four birds with one stone :) Dear Svenja, I hope your rascals and you like the quick egg salad as well as us.
Fruity Egg Salad
I combined the delicious egg salad with oranges, apples and spring onions. A great combination of ingredients that just fit together perfectly. There is also a simple dressing of yoghurt, salad mayonnaise, curry, salt and pepper. The curry powder in the dressing gets the salad a really great taste. I love it!
The spring-fresh salad tastes super pure for an extensive Sunday brunch. I also like it especially on freshly toasted breads. Give it a try:)

Low Carb and Point Friendly

- 2 Oranges
- 1 apple
- 2 spring onions
- 4 hard-boiled eggs
- 1 EL Salad mayonnaise
- 4 EL skim milk yoghurt
- 1 TL chopped parsley TK
- 1/2 TL curry powder
- Salt
- pepper

The Peel and fillet orange. Peel the apple and cut into small cubes. Slice the spring onions. Peel and quarter the eggs.I'm always excited about your messages and emails ♥
