Following my Mediterranean spaetzle with rocket, today is a true classic in Spätzle cuisine - delicious cheese spaetzle with lots of cheese.

Cheese spaetzle really likes everyone, right? In any case, I already loved the Swabian classic as a child. By the way, my mother too, because cheese spätzle are prepared really fast. :)

If there are spaetzle in our home, then we like to vary the ingredients. But never more with the cheese, because this mixture of Emmentaler, mittelaltem and old mountain cheese is just a dream!

I got the cheese from the mother of a buddy, me the mixture extra at the weekly market in the Allgäu worried. Again a big thank you! I do not use any other cheese for my spaetzle.

Cheese spaetzles are really simple, because you only need spaetzle, cheese, salt and pepper. But most of the time I fry some onions in butter and mix them with the spaetzle pan.
